We love eating Paleo.

One of the harder aspects of eating Paleo is finding appropiate substitutions for all our cooking needs. Something as simple as finding a good (read tasty) replacement for sugar in our morning coffee can easily cause someone (read Tara) to throw their hands up in the air out of frustrations because let’s face it people, we want life to taste good.

Coconut has come to the “rescue” on more than one occasion in the Martin/Dowe household. Unsweetened shredded coconut on fresh fruit is phenomenal. Coconut milk in coffee takes the need for sugar / artificial sweetners not to mention makes a great sauce for all your cooking needs.

The one thing we were slow in trying in our kitchen was coconut oil.

A while back we stumbled upon an opportunity to give The Tropical Traditions Gold Label Virgin Coconut Oil a try. If this little glass of coconutty goodness hadn’t made it to our front steps it might have been quite some time before we discovered how awesome coconut oil is in the kitchen.

We’ve been using it now for a few weeks and must say, it has been working really well (read why didn’t someone tell us sooner). Used mainly as a frying oil for us (as with many paleo eaters) we love that the heating point is much higher than in your traditional olive oils (which can become toxic and burn easily when heated too high). The slight coconut-y taste on sauteed veggies is delicious but not over bearing and once you realize you can fry fruit with coconut oil…well let’s just sum it up with three words: A.MAZE.ING!

We’re just now starting to venture into the world of paleo baking (Meegan is a top notch baker in the traditional sense so there is a lot of excitement over the possibilities). Coconut oil may just become a necessary staple in our household.

Recipe time!

 Coconut Fried Pineapple


  • Sliced pineapple (ring or halves)
  • 1 Tbsp Tropical Traditions Virgin Coconut Oil
  • Crushed almonds (or homemade almond flour)
  • Coconut milk
  • Shredded unsweeted coconut.

In skillet heat coconut oil on medium/high heat.  Place pineapple in hot skillet and cook on each side for about 2 minutes or until pineapple starts to brown (crystallize). If you want to be cautious about not searing the pineapple too much you can flip it about every minute until desired crispiness. 

Once pineapple is cooked to your liking remove from skillet and lightly flour with crushed almonds or almond flour (we always have homemade almond flour made with the magic bullet on hand). Spoon coconut milk over pineapple / almond flour and sprinkle with unsweetened coconut…

~Now that’s good eatin’ folks!
